Frozen Spinach – With the help of frozen spinach, this side dish becomes even easier to assemble. Simply pick up two pounds of frozen spinach (2 16-ounce bags) from the store for this recipe. Then, to defrost the spinach, place it in a colander in the sink and run it under cold water. The frozen chunks will begin to break apart and in a few seconds your spinach will be completely defrosted. The last and most important step involves squeezing out as much moisture from your spinach as possible. Too much water in your casserole could result in a soupy, bland mess. Therefore, squeeze the thawed spinach in your hands allowing the water to drain out before adding it to the bowl with the rest of your ingredients.

Plain Breadcrumbs – Breadcrumbs give this cheesy spinach casserole an unexpected crunch! You can either toss all the breadcrumbs in with the casserole mixture, or reserve half of them for sprinkling on top.   • 1 cup cream cheese
